Cold Tomato Sauce

Like other tomato sauces, this recipe goes well with fish of various kinds.

ingredients

makes about 600 ml (1 pint)
1 lb (450 g) fresh tomatoes, peeled, deseeded and chopped
1 clove garlic, crushed
2/3 cup (150 ml) 1/4 pt mayonnaise
2/3 cup (5 fl oz.) 160 ml soured cream
1 teaspoon concentrated tomato puree (paste)
2 teaspoon finely chopped fresh basil

method

1. Blend the tomatoes and garlic until smooth.

2. Then stir in the remaining combined ingredients and chill before serving.
