Basic Cheese Souffle

ingredients

serves 4 - 5
2 tbsp (25 g) 1 oz butter
1 tbls (15 g) 1/2 oz plain flour (All purpose)
2/3 cup (150 ml) 1/4 pt milk
3 eggs, separated
salt and pepper
4 oz (100 g) Cheddar cheese, grated

method

1. Melt the butter in a saucepan and stir in the flour.

2. Cook, stirring, for 1 minute, then gradually stir in the milk.

3. Cook, stirring, until thickened. Remove from the heat and cool a little, then stir in the egg yolks, salt, pepper and cheese.

4. Whisk the egg whites until stiff and fold into the cheese mixture.

5. Spoon into a buttered 15 cm (6 inch) casserole or souffle dish.

6. Bake in the centre of a preheated moderately hot oven 190°C (375°F) Gas Mark 5 for 25 to 30 minutes or until risen and golden brown.

7. Serve immediately.

HAVING NEVER MADE A SOUFFLE BEFORE THIS RECIPE WAS VERY EASY TO FOLLOW AND THE RESULTS "EVERY TIME" WERE OUTSTANDING. I HAVE PASSED THIS RECIPE ON TO MY FRIENDS AND THEY HAVE HAD THE SAME RESULT. THANKYOU FOR THIS RECIPE

I got all my ingredients in individual bowls and literally followed each stage and voila..! perfect souffle that even my french boyfriend was very impressed with :) i just halved everything and it was perfect amount for the two of us
