Pineapple Fritters

Pineapple rings dipped in coating batter with a delicate cinnamon taste, otherwise known as pineapple fritters.


1 cup + 3 tbsp (125 g) plain flour (All purpose)
pinch of salt
1 egg
2/3 cup (150 ml) 1/4 pt milk or milk and water

for the fritters

several pineapple rings
caster sugar (superfine granulated), to coat
a little ground cinnamon


to make the coating batter

1. Mix together the flour and salt.

2. Make a well in the centre and break in the egg.

3. Add half the liquid and beat the mixture until smooth.

4. Gradually add the rest of the liquid and beat until well mixed.

to make the fritters

1. Soak some drained, canned pineapple rings.

2. Dip the pineapple rings in coating batter and fry until golden in deep fat hot enough to brown a 2.5 cm (1-in) cube of bread in 60-70 seconds.

3. Drain on crumpled kitchen paper,

4. Toss in caster sugar and a little ground cinnamon and serve straight away.

5. If you prefer, fry fritters in shallow fat, turning each one once.

They are nice but you need to add about one tsp of suger more if you wish, other wise, they where good

Just made these tonight and I found I needed to add a lot more milk & water than what is specified. After I dunked the pineapple them in the batter I made three different versions, 1) rolled in coconut after the batter, 2) rolled in japanese breadcrumbs after the batter and 3) just the batter. I then popped them all in the freezer to fry at a later stage as I made so much. I'll update on how they all taste once i fry them.

I also found that I needed to add more milk then specified, probably about twice as much. Batter was great,i used icing sugar rather then caster sugar and it was really nice

Just made these tonight, the recipe was absolutely spot on! Tasted great! I suggest you serve with vanilla ice cream, the fritters taste great with it.
