1. Peel and finely chop the apples. Put them into a sauce-pan with the water and nutmeg and set them on a low heat.
2. Cover, and cook them for 15 minutes or until they can be beaten to a puree.
3. Stir in the honey and cool them.
4. Beat one-third of the apples into the egg yolks.
5. Stiffly whip the whites and fold them into the yolks and apples.
6. Melt the butter in an omelet pan on a moderate heat and pre-heat the grill (broiler) to moderate.
7. Pour the egg mixture into the pan and spread it out. Cook it for 2 minutes.
8. Put the pan under the about 10cm (4 in) away from the heat for the omelet to setand brown.
9. Slide the omelet onto a large plate and top it with the remaining apple puree.
10. Alternatively, top it in the pan, fold and slice into 4 for serving.
