Irish Bangers

ingredients

2 tsp. ground white pepper
1 tsp ground ginger
1 tsp sage
1 tsp mace
3 oz salt
6 oz bread crumbs, plain
10 lbs. fat pork butt (if lean add 1 lb fat back,
2 cups ice water

method

1. Grind meat, 1/2 medium 1/2 fine add spices and mix very well.

2. Stuff into small casing links or make into compact pattys.

3. Leave overnight in Fridge before freezing.

4. Fry till golden brown

At what point do you use the ice water? is it mixed into the meat along with the spices?

Actually you use it while your grinding the meat, it's so the fat doesn't block up the grinder:)

Flavor is really close, its really dry on the backside. I used 80/20 ground pork. Is this too lean? Do I need more fat?
