Breast of Lamb with New Potato Salad and Herb Salsa

ingredients

serves: 4
1 clove garlic, crushed
3 spring onions, sliced
4 tbsp parsley, finely chopped
4 tbsp basil, finely chopped
4 tbsp thyme, finely chopped
4 tbsp mint, finely chopped
3 tbsp olive oil
3 tbsp sherry vinegar
salt and freshly ground black pepper
1 breast of lamb
4 tbsp olive oil
500 g new potatoes, boiled and diced
1 red onion, sliced
1 red pepper, sliced
2 tomatoes, sliced
120 g bag Watercress (salad cress) and spinach

method

1. Mix all the salsa ingredients together and set aside.

2. Cook the lamb according to the pack instructions, remove from the oven and slice when cool.

3. Mix the salad ingredients together and arrange on a plate.

4. Top with the lamb and spoon over the salsa.
