Sausage and Bean Pot

ingredients

serves: 4
1 tsp oil
8 thick premium pork sausages
700 g bottle Italian passata
1 tbsp brown sugar
2 x 410 g cans mixed pulses, drained and rinsed
300 g can new potatoes, drained
1 red and yellow pepper, deseeded and cut into 5 cm pieces
salt and freshly ground black pepper
20 g flat leaf parsley, roughly chopped

method

1. Heat the oil in a medium size saucepan over a moderate heat, add the sausages and brown on all sides, this will take approximately 5 minutes.

2. Then add the passata, sugar and 1 jar full of water and cook for a further 15 minutes.

3. Lastly add the beans, potatoes and pepper and cook for another 5 minutes.

4. Transfer to individual serving dishes and sprinkle with the parsley.
