1 tbsp olive oil
1 clove garlic, crushed
4 turkey breast fillets
1 onion, chopped
1 red pepper, sliced
237 g can chopped tomatoes
2 tbsp tomato puree (paste)
6 black olives, halved
salt and freshly ground black pepper
2 tbsp freshly chopped parsley
. Heat the oil and fry the garlic, turkey breasts and onion for 4 - 5 minutes, stirring occasionally.
2. Add the pepper, tomatoes, tomato puree, olives and seasoning and cook for a further 4-5 minutes.
3. Transfer to a warmed serving plate and sprinkle with freshly chopped parsley.
