method
1. Hollow out the centre of each cucumber section to form cup shapes and stand upright.
2. Mix the cream cheese and lemon juice together.
3. Set aside 8 prawns for garnish.
4. Add the remainder to the cheese mixture, with the pimentos and mint.
5. Season with salt, pepper and paprika to taste, mix well.
6. Pile the filling into the cucumber cups and garnish with the reserved prawns.
7. Serve with thin slices of buttered brown bread.
