10 x Granny Smith apples, peeled, cored and sliced
1/2 oz (15 g) 1 tbls unsalted butter
2 tsp ground cinnamon
500 g pack puff pastry
125 g Cheshire cheese, crumbled
1 medium size egg yolk
3 tbsp milk

method

1. Preheat the oven to 200°C (400°F) gas mark 6.

2. Melt the butter in a saucepan over a moderate heat, add the apples and cinnamon and cook gently for 5-7 minutes until the apples are tender.

3. Drain the apples and put to one side.

4. Cut the pastry in half , roll out and line an 18 cm diameter loose bottomed flan ring. Fill the lined case with half the apples. Sprinkle over the crumbled cheese and spoon the remaining apple on top of the cheese.
