Chocolate Coconut Brownies

ingredients

serves: 16
1 cup (150 g) wholemeal self-raising flour
1/2 tsp Bicarbonate of soda (Baking soda)
7/8 cup (175 g) 6 oz light brown soft sugar
125 g desiccated coconut
4 tbsp cocoa powder
125 g margarine, diced
2 medium eggs, beaten
2/3 cup (150 ml) 1/4 pt milk

method

1. Grease and line a 22 cm square dish.

2. Mix together the flour, bicarbonate of soda, sugar, coconut and cocoa in a large bowl.

3. Place the margarine in a bowl and microwave on high for 1 minute. Beat into the dry ingredients, with the eggs and milk, until smooth. Pour into the prepared dish.

4. Cook on high for 8 minutes. Leave to stand for 5 minutes, then turn out onto a wire rack to cool.

5. Cut into squares to serve.

Bland and dry

I doubled the recipe, as I had a lot of dessicated coconut lying around, and figured: 'how wrong can you go with coconut and chocolate?' Quite, apparently. It turned out very crumbly, having a texture of dessicated coconut, and being rather bland in flavour. I would not recommend this recipe.
