Pork in Soy Sauce with Mushrooms

serves 4
1 kg (2.2 lb) fillet or leg of pork, cut into small cubes
450 ml vegetable oil
250 g button mushrooms, quarted or halved
3 garlic cloves, chopped finely
5 cm piece fresh ginger, peeled and chopped finely
3 tbsp hot water
2 tbsp dark soy sauce
4 spring onions, sliced thinly
2 tbsp chopped flat- leaf parsley
1/4 tsp ground white pepper

for the marinade

2 tbsp rice wine or dry sherry (optional)
1 tbsp light soy sauce
1 tsp mild vinegar
2 tsp plain flour
a large pinch ground white pepper
1 garlic clove, crushed

1. Put the pork cubes in a bowl and mix in all the Ingredients for the marinade. Leave to marinate for 30 minutes.

2. Heat the oil in a wok or frying-pan, and fry the mushrooms in 2 batches for 3 minutes each time.

3. Remove with a slotted spoon and put them on a plate lined with some absorbent paper.

4. In the remaining oil fry the pork pieces in 3 batches, each time for 3 minutes.

5. Take them out with a slotted spoon and drain in a colander.

7. Add the hot water and soy sauce, stir and add the fried meat and mushrooms. Stir them around for 1 minute, then add the rest of the Ingredients .

9. Serve immediately, with plain boiled rice, potatoes or pasta accompanied by a salad.
