Juicy Tomato Beefburgers

ingredients

serves 2
500 g pack extra lean minced beef or minced lamb
1 large onion, finely chopped
4 tbsp, heaped spoons fresh breadcrumbs
2 tbsp spoons freshly chopped parsley
1 1/2 tbsps sundried tomato paste
salt and freshly ground black pepper
2 tbsp plain flour (All purpose)
4 tbsp olive oil

method

1. Preheat the oven to 190°C (375°F) Gas Mark 5.

2. Place the mince in a bowl with the onion, breadcrumbs, parsley, sundried tomato paste and seasoning, mix well.

3. Using well floured hands, shape the mixture into 6 flattened rounds.

4. Place on a baking sheet and drizzle over the oil.

5. Bake in the preheated oven for 25 minutes until golden and cooked through

WOW... If you like burgers, you will LOVE these. Even my kids eat them knowing there was tomato in there. Seriously, I can't wait for the BBQ weather to come around so I can get them on there.
