Bacon and Egg Muffin

ingredients

serves: 2
2 plain white muffins
4 rashers smoked or unsmoked back bacon, grilled until crisp
2 medium sized eggs, lightly poached in simmering water for approximately 3 minutes
2 tbsp Sainsburys hollandaise sauce
1 tbsp freshly chopped chives
salt and freshly ground black pepper

method

1. Split the muffins in half and lightly toast on both sides.

2. Arrange 2 slices of crispy bacon on one half and top with the freshly poached egg.

3. Spoon over a 1 tbsp of hollandaise sauce, sprinkle with chives and add seasoning to taste.

4. Eat straight away!
