1 tbsp (15 ml) chopped fresh mint
1 tbsp (15 ml) chopped fresh parsley
8 oz (225 g) English Cheddar cheese, grated
125 g (4 oz) cottage cheese
1 garlic clove, skinned and crushed
6 cocktail gherkins, chopped
salt and freshly ground pepper
1. Put the herbs and cheeses into a bowl and beat well until smooth.
2. Add the garlic, gherkins and seasoning.
3. Chill well and serve with washed whole radishes, cucumber and celery sticks.
