Turkey Lasagna

ingredients

1 pound ground turkey breast
1 clove minced garlic
1 (14 1/2-ounce) can chopped tomatoes with liquid
1 (6-ounce) can tomato paste
2 1/2 teaspoons Italian seasoning
8 lasagna noodles
1 (12-ounce) carton low-fat cottage cheese
2 cups shredded part-skim mozzarella cheese

method

1. In a 2-quart dish, combine turkey, garlic and onion. Cover.

2. Microwave on high (100 percent power) 5 minutes or until no longer pink; stir once and break apart meat; drain.

3. Stir in tomatoes, paste and Italian seasonings. Cook on high 5 minutes.

4. To assemble: In a 9-by-13-inch baking dish, spoon one-third of sauce (about 1 1/3 cups) over bottom of dish.

5. Top with 4 lasagna noodles, broken to fit dish. Spoon cottage cheese over noodles and mozzarella over cottage cheese.

6. Spoon one-third sauce over cheese; top with 4 more noodles. Spoon remaining sauce over noodles and cover and vent with plastic wrap.

7. Now, place several layers of white paper towels in microwave to catch any spills.

8. Place dish on towels and microwave on high 5 minutes. Reduce power to medium (50 percent power) and microwave 20 to 25 minutes or until noodles are tender.

9. Let stand, covered, 5 minutes.
