175 g (6 oz) Caerphilly cheese (mozzarella or Scmorzel cheese), grated
25 g (1 oz) walnuts, chopped
2 oz (50 g) sultanas (golden raisins)
3 medium sticks celery, cleaned and chopped
1 small green pepper, seeded and chopped
2 red dessert apples, cored and diced
3 tbsp (60 ml) olive oil
25 ml (1 1/2 tbsp) lemon juice
salt and freshly ground pepper
175 g (6 oz) ham, roughly chopped
1. Mix together the cheese, walnuts, sultanas, celery, pepper and apples, and toss together thoroughly.
2. Whisk the oil, lemon juice and seasonings together. Add to the salad and mix well.
3. Arrange the ham and salad mixture alternately on serving dish.
