Brunswick Stew

ingredients

serves 4
1 rabbit, jointed
Seasoned flour
Beef dripping (fat from roasted meat)
1 lb (450 g) small new potatoes, with their skins on
1 medium tin of tomatoes
1 lb (450 g) runner beans, stringed and sliced
4 spring onions, chopped
1 glass red wine
1 bay leaf
1 tsp dried thyme
Salt and pepper to taste

method

1. Toss the rabbit pieces in the seasoned flour and gently fry in the dripping until browned all over.

2. Lift out of the fat and place in a casserole dish.

3. Add all the other ingredients to the casserole dish.

4. Cover and cook in the oven Gas mark 4, 350°F (180°C) for 1 1/2 hours.
