Caper sauce works especially well with boiled fish dishes and mutton.
1/2 pint white sauce
1 tablespoon caper juice or lemon juice
1 tablespoon capers (use half milk and half white or fish stock)
1. Add caper juice or lemon juice to the stock before making the sauce.
2. Add the finely chopped capers to the sauce just before serving
