Golden Fruit Jelly

ingredients

serves 4
20 g (3/4 oz) powdered gelatine
750 ml (1 1/4 pints) unsweetened apple juice
1 banana
1 dessert apple
1 ripe pear
low-fat natural yogurt, to serve

method

1. Mix the gelatine and 75 ml (5 tbsp) water in a heatproof bowl and leave for about 5 minutes, until softened.

2. Put the bowl over a saucepan of gently simmering water until the gelatine dissolves.

3. Remove from the heat and leave to cool slightly.

4. Stir in the apple juice and mix well.

5. Meanwhile, prepare the fruit.

6. Peel and slice the banana, core and dice the apple and core and dice the pear.

7. Place the fruit in a 1.1 litre (2 pint) decorative jelly mould.

8. Pour the liquid into the jelly mould and chill until set.

9. To unmould, lightly draw a knife that has been dipped in hot water around the rim of the mould, then place the mould in hot water for 2 - 3 seconds.

10. Put a damp serving plate over the mould and invert quickly, holding with both hands and shaking sharply.

11. Remove mould.
