Sliced Potatoes with Parsley and Celery Seeds

ingredients

serves 8
1.4 kg (3 lb) medium potatoes
salt and freshly ground pepper
1/2 stick (4 Tbsp) 2 oz (50 g) butter
2 level tsp (10 ml) celery seeds

method

1. Scrub the potatoes. Cover with cold salted water and bring to the boil. Boil for about 30 minutes until tender.

2. Drain well then cut the potatoes into 0.5 cm (1/4 inch) slices and place in a shallow serving dish.

3. Melt the butter in a pan, add the celery seeds, parsley and plenty of seasoning and spoon over the potatoes. Serve hot.
