Red Cabbage and Apple Salad

ingredients

serves 8
1/2 red cabbage, about 2 lb (900 g), finely shredded
3 dessert apples, peeled, cored and sliced
1 small garlic clove, skinned
1 1/4 cup (1/2 pint) 300 ml salad oil
2/3 cup (150 ml) 1/4 pt cider vinegar
4 tbsp (60 ml) natural yogurt
salt and freshly ground pepper

method

1. Blanch the cabbage for 2-3 minutes in boiling salted water. Do not overblanch as it will lose its crisp texture. Drain and cool.

2. Combine the apple with the cabbage in a bowl. Put the rest of the ingredients in a screw-top jar, shake we'll. Pour at once over the cabbage, toss.

3. Refrigerate the salad covered overnight. Toss again to mix well before serving.
