Potato Kephtides

ingredients

makes 8
1 lb (450 g) cold potatoes, mashed
2 tbsp (25 g) 1 oz butter, melted
3 spring onions, chopped
2 large tomatoes, peeled, deseeded and diced
1/2 cup (50 g) 2 oz flour, sifted
Salt and pepper to taste
Olive oil for frying

method

1. Pass the mashed potato through a sieve.

2. Add all the other ingredients to the potato and mix well

3. Heat the oil.

4. Divide the mixture into 8 portions and shape into small, flat cakes.

5. Fry until golden brown. Drain and serve hot.
