4 oz (100 g) smoked chicken meat, skinned and chopped
3 tbsp (60 ml) medium dry white wine
1 tbsp (15 ml) low-fat natural yogurt
2 spring onions, trimmed and chopped
2.5 ml (1/2 tsp) ground mace
1 tbsp (15 ml) chopped fresh tarragon or 2 tsp (10 ml) dried
2 tbsp (30 ml) diced celery or cucumber
1/2 oz (15 g) polyunsaturated margarine
8 slices granary bread
1 lettuce leaf, shredded
1. Mix together the chicken, wine, yogurt, spring onions, mace and 10 ml (2 tsp) of the fresh tarragon or 7.5ml (1 1/2 tsp) dried. Then add the celery or cucumber and mix well.
2. Beat the remaining tarragon into the margarine and use to spread on the bread.
3. Fill each sandwich with the prepared chicken mixture and shredded lettuce.
4. To serve, cut each sandwich diagonally into 4.
