Microwave Rhubarb Betty

ingredients

serves 4
1 lb (450 g) rhubarb, cut into 5 cm (2 inch) lengths
3/8 cup (75 g) light muscovado sugar
grated rind and juice of 1 orange
4 oz (100 g) fresh wholemeal breadcrumbs
2.5 ml (1/2 tsp) ground Mixed Spice (All Spice / Pumpkin pie spice)
25 g (1 oz) polyunsaturated margarine

method

1. Put rhubarb, 25 g (1 oz) sugar and orange juice into a bowl.

2. Cook, uncovered, 100% (High) 4 - 5 minutes.

3. Mix the remaining sugar with the orange rind, breadcrumbs and mixed spice.

4. Put half this mixture in the bottom of a greased microwave oven dish..

5. Spoon the rhubarb mixture over the top, then cover with the remaining crumb mixture and dot with the margarine.

6. Cook, uncovered, 100% (High) 4 minutes.

7. Brown surface under a grill before serving if liked.
