Minty Fruit Salad

ingredients

serves 4
scant 1/2 (us) cup (100 ml) unsweetened apple juice
1 red eating apple, cored and sliced
1 green eating apple, cored and sliced
2 ripe pears, sliced
3 satsumas, peeled and segmented
2 bananas, peeled and sliced
1 tbsp (15 ml) chopped fresh mint
fresh mint sprig, to decorate

method

1. Put the apple juice in a bowl and add the remaining ingredients.

2. Toss gently so all the ingredients are coated in the apple juice.

3. Cover and chill until ready to serve.

It is a very healthy option and a good way to get kids eating more healthier foods!
