Microwave Nasi Goreng

ingredients

serves 4
8 oz (225 g) brown rice
2 tbsp (30 ml) groundnut (peanut) or corn oil
1 large onion, skinned and chopped
1 garlic clove, skinned and crushed
1 green chilli, seeded and chopped
1/2 green pepper, cored, seeded and cut into strips
2 oz (50 g) button mushrooms, sliced
4 oz (100 g) cooked chicken meat, skinned and diced
4 oz (100 g) peeled cooked prawns
2 oz (50 g) shelled unsalted peanuts
2 oz (50 g) frozen peas
2 spring onions, trimmed and finely chopped
1 tbsp (15 ml) soy sauce, preferably naturally fermented shoyu
1/2 tsp (2.5 ml) dark muscovado sugar
salt and pepper, to taste

to garnish

3 tomatoes, cut into wedges
shredded lettuce and a green chilli flower

method

1. Put rice and 600 ml (1 pint) boiling water into a bowl.

2. Part cover and cook 100% (High) 5 minutes, then cook 60% (Medium) 20 - 25 minutes or until rice is tender and the liquid absorbed.

3. Put oil, onion, garlic, chilli and green pepper into a dish.

4. Cover and cook 100% (High) 4 minutes,"stirring once.

5. Add mushrooms, cook 1/2 minute. Stir in remaining ingredients and cook 4-5 minutes, stirring twice.

6. Spoon on to a heated serving dish.

Garnish.
