Apple Slices Poached in Cider

ingredients

serves 4
1 1/4 cup (1/2 pint) 300 ml sweet cider, or dry cider mixed with 25 g (1 oz) light muscovado sugar
1 cinnamon stick
2 cloves
1 lb (450 g) eating apples
2 oz (50 g) sultanas (golden raisins) (optional)

method

1. Pour the cider into a saucepan, add the cinnamon and cloves and bring slowly to the boil.

2. Quarter the apples, remove the cores, then slice and add to the hot cider, with the sultanas.

3. Cover and simmer for 5 - 10 minutes, until tender.

4. Remove the spices.

5. Serve hot or cold.
