Creamed Fava Beans

ingredients

serves 4
1 lb (450 g) fava beans, shelled
2 oz (50 g) mushrooms, wiped and sliced
2 tbsp (25 g) 1 oz butter
2/3 cup (150 ml) 1/4 pt fresh double cream (heavy cream)

method

1. Cook the beans in boiling salted water for 15 - 20 minutes, until tender.

2. Meanwhile, fry the mushrooms in the butter and keep warm.

3. Drain the beans in a colander. Return to the pan. Add the mushrooms and pan juices with the fresh cream. Mix well and reheat gently
