Mint and Coriander Spiced Turkey

This is a great party recipe for leftover turkey, which is spiced with a mint and coriander mayonnaise-style sauce.

ingredients

1 lb 4 oz (550 g) cooked turkey, cut into large chunks
sprigs of mint, for garnish

for the sauce

8 oz (225 g) mayonnaise
8 oz (225 g) Greek-style yoghurt
1 teaspoon ground cumin
1 teaspoon ground coriander
2 tablespoons chopped parsley
2 tablespoons chopped mint
6 spring onions, chopped
salt and freshly ground black pepper

method

1. Mix all the sauce ingredients together. Add the turkey, taste and add more seasoning, if necessary.

2. Turn into a glass bowl, cover and leave in the refrigerator overnight for the flavours to blend.

3. Next day, serve in a shallow dish, garnished with mint sprigs. Serve with hot garlic bread and salad.
