Avocado Pears and Soured Cream

ingredients

serves 4
2 avocado pears
1 tsp lemon juice
1 tsp salt
2 tsp caster sugar (superfine granulated)
1/4 tsp dry mustard
a pinch of paprika
2/3 cup (150 ml) 1/4 pt soured cream

method

1. Halve the pears lengthways and remove the stones.

2. Scoop all the flesh out of the skins, and mash it with the lemon juice and 1/4 tsp salt.

3. Replace the flesh in the shells.

4. To make the dressing, mix all the remaining ingredients together until smooth.

5. Top the pears with the dressing.
