Herb Vinaigrette

ingredients

makes 1/4 pt (125 ml) dressing
salt and freshly ground black pepper
1/2 tsp Dijon mustard
1/2 tsp sugar
2 tbsp white wine vinegar
6 tbsp olive oil
1/2 tbsp lemon juice
1 tsp chopped fresh tarragon
1 tsp chopped fresh chervil
1 tsp chopped fresh dill
2 tsp chopped fresh chives
1 garlic clove

method

1. Mix together the mustard, sugar, and vinegar and season to taste with salt and pepper.

2. Stir well. Gradually beat in the oil using a wooden spoon.

3. Add the lemon juice and stir in the herbs.

4. Add the whole garlic clove and leave for 1 hour.

5. Remove the garlic and use as required. Chill before using.
