Apple Syllabub

ingredients

serves 6
3 Golden delicious apples, peeled, cored and chopped
2 tbsp Water
1 tbsp caster sugar (superfine granulated)
2/3 cup (150 ml) 1/4 pt Sweet white wine
Zest and juice of 1 lemon
3 1/2 tbsp (40 g) caster sugar (superfine granulated); (1 1/2oz)
284 ml double cream (heavy cream) (10 floz)

to garnish

Fresh mint sprigs
Apple slices

method

1. Place the chopped apples, water and sugar in a saucepan, cover and cook 8-10 minutes, until soft. Allow to cool.

2. Place the wine, lemon zest and juice, sugar and cream into a bowl and whisk until the mixture holds its shape.

3. Carefully fold in the apple puree and spoon into 6 tall glasses.

4. Allow to chill for 1-2 hours then decorate with the mint and apple slices.
