Curly Kale and Parsley

ingredients

serves 4
1 kg (2 1/4 lb) curly kale
2 tbsp olive oil
2 tbsp freshly chopped parsley
salt and pepper

method

1. Remove the leaves of the kale off the stalks and shred the leaves.

2. Heat the oil in a large saucepan. Add the kale leaves, cover and cook over a low heat until the kale is tender. 20 - 30 min.

3. Season with salt and pepper, stir in the parsley and serve at once.
