Lollipops

ingredients

makes 10
1 cup + 2 tbsp (225 g) granulated sugar
4 oz (110 g) golden syrup (substitute light corn syrup)
2/3 cup (150 ml) 1/4 water
lollipop sticks

method

1. Heat the sugar, syrup and water gently in a heavy based saucepan until the sugar dissolves.

2. Bring to the boil and cook until a small drop of the mixture placed in cold water forms a ball firm enough to retain its shape.

3. oil an enamel flat surface and pour on spoonfuls of the mixture so it forms rounds.

4. Place a lollipop stick into each round while soft, then pour over more mixture to cover the stick.

5. Leave to set, then lift off from the work surface and wrap in cellophane.
