Cauliflower Fritters

Cauliflower Fritters is a dish consisting of breadcrumb-coated cauliflower flowerets in a rich cheese sauce.

ingredients

serves 4 - 6
1 cauliflower, cut into flowerets
3/4 cup (3 oz) 90 g dried breadcrumbs
45 g (1 1/2 oz) 1/3 cup grated Parmesan cheese
1 tablespoon chopped fresh parsley
salt and pepper
2-3 eggs, beaten

for the cheese sauce

3 tbsp (1 1/2 oz) 40 g butter
1 tbsp (15 g) flour
315 ml (10 fl oz) 1 1/4 cups milk
1/2 teaspoon prepared mustard
60 g (2 oz) 1/2 cup grated Cheddar cheese
pinch of cayenne pepper

method

1. Par-boil cauliflower in a saucepan of boiling, salted water for 4-5 minutes; drain well.

2. In a bowl, mix together breadcrumbs, Parmesan cheese and parsley and season with salt and pepper.

3. Dip cauliflower flowerets in beaten egg, then coat in breadcrumb mixture.

4. Put onto a serving plate and set aside until ready to cook in the hot oil.

5. To make cheese sauce, melt butter in a small saucepan, stir in flour and cook for 1 minute.

6. Remove from heat and add milk slowly.

7. Bring to the boil, stirring, then simmer for 2 minutes.

8. Stir in mustard, cheese, cayenne and season with salt and pepper.

9. Serve hot.
