Pineapple Salad

ingredients

serves 4 - 6
1 small pineapple or 400 g canned pineapple
1 celery heart
4 tbsp mayonnaise or salad dressing
salt and pepper

for the garnish

1/2 lemon, thinly sliced

method

1. If using a fresh pineapple, peel, removing all the eyes, and cut out the core.

2. Cut the fresh or canned pineapple into 5mm pieces.

3. Shred the celery finely and add to the pineapple with the mayonnaise or salad dressing and the seasoning.

4. Toss the mixture lightly, then chill for at least 2 hours.

5. Garnish with lemon slices just before serving
