2 tbsp oil
250 g (9 oz) streaky bacon, shredded
1 green chilli,sliced
1 green pepper, deseeded and diced
2 spring onions, sliced
2 large eggs, beaten
175 g (6 oz) long-grain rice, cooked
3 tbsp dark soy sauce
method
1. Heat the oil in a wok, add the bacon and cook until brown and crisp. Add the chilli, pepper and spring onions and cook for 1 minute. Add the eggs, stirring all the time for 1 minute.
2. Add the cooked rice, soy sauce and seasoning. Heat through and serve.
