Courgette and radicchio salad

Preparation time: 15 minutes, plus standing,

ingredients

serves 6
4 tablespoons light French dressing (see Recipe 181)
1 garlic clove, crushed
250 g (9 oz) courgettes, thinly sliced
1 head of radicchio
50 g (2 oz) black olives, halved and stoned
1 tablespoon pine nuts
salt and pepper

method

1. Put the French dressing and garlic in a salad bowl. Add the sliced courgettes and toss well.

2. Leave to stand for 30 minutes to allow the courgettes to absorb the flavour of the dressing. Tear the radicchio leaves into manageable pieces and add to the courgettes and dressing with the black olives and pine nuts.

3. Season with salt and pepper to taste. Toss the salad thoroughly before serving.

4. Pine nuts are an important ingredient of vegetarian cooking. They are high in protein. They have long been used in Italian and French dishes.
