Fried Cucumber and Pineapple

ingredients

4 - 6 servings
2 Tbs Vegetable oil
2 Small cucumbers, thinly sliced crosswise
1/2 tsp Salt
1 Tbs Vinegar
225 g (8 oz) Canned pineapple chunks, drained
175 ml (6 fl oz) 3/4 cup Water
2 tsp Flour
1 tsp Sugar
1 tsp Soy sauce

method

1. Heat the oil in a frying-pan. Add the cucumber slices, salt and vinegar and cook for 4 minutes, stirring frequently. Add the pineapple to the pan and cook for a further 2 minutes, stirring occasionally.

2. Beat the water, flour, sugar and soy sauce together until the mixture is smooth. Pour into the frying-pan and bring to the boil, stirring constantly. Cook for a further 4 minutes, stirring occasionally.

3. Transfer the mixture to a warmed serving dish and serve at once.
