1 onion, grated
675 g (1 1/2 lb) white cabbage, grated
225 g (8 oz) carrots, grated
100 g (4 oz) hazelnuts, coarsely chopped
100 g (4 oz) fresh brown breadcrumbs
1 large egg
3 tablespoons soy sauce
1 teaspoon marjoram
salt and pepper
25 g (1 oz) plain flour
oil for deep frying
parsley sprig to garnish
1. Mix together all the ingredients, except the flour, and beat well. Shape the mixture into eight cakes and coat each in the flour.
2. Heat the oil for deep frying to 190C/375F (until a cube of bread turns golden in 30 seconds). Cook the burgers a few at a time for 5-7 minutes, or until golden, and drain on absorbent kitchen paper. Keep hot
while cooking the remaining burgers.
3. Garnish with a sprig of parsley and serve hot with Leeks in Sauce (see recipe 111). ********
These burgers freeze well. Make a large batch, shape and open freeze on cling film until firm. Pack in bags and label. Cook from frozen.
