Mediterranean pasta twists

ingredients

serves 4
225 g (8 oz) courgettes
1 aubergine
1 green pepper
2 tbsp olive oil
1 onion, chopped
1 clove garlic, crushed
450 g (2 lb) ripe tomatoes, skinned and chopped
2 tbsp tomato puree
1 tbsp chopped oregano OR 1 tsp dried oregano
salt and pepper
350 g (12 oz) pasta twists
grated Parmesan cheese
basil sprigs (optional)

method

1. Slice courgettes, dice aubergine and seed and chop green pepper.

2. Heat oil in a heavy-.based pan, add onion and garlic and cook for 4 - 5 mins until soft.

3. Add courgettes, aubergine, pepper, tomatoes, tomato puree, oregano and seasoning. Bring to the boil, stirring, then cover and simmer gently for 20 - 30 mins, stirring occasionally, until vegetables are tender.

4. Towards the end of cooking time, put pasta in a large pan of oiling, salted water and cook for 10 - 12 mins.

5. Drain pasta. Top with vegetables, sprinkle with cheese and garnish with basil.
The sauce in this dish is very versatile. Use it in lasagne, as a topping for baked potatoes or serve with brown rice.
