West Country potatoes

If you have difficulty in buying the cheese, use plain Cheddar and sprinkle with finely snipped chives or chopped onions.

ingredients

serves 12
12 even-sized potatoes,
scrubbed vegetable oil, for brushing
salt
225 g (8 oz) Double Gloucestercheese with chives and onion

method

1. Heat the oven to 220°C/425°F/Gas7.

2. Prick the potatoes well with a fork, then brush each one with a very little oil.

3. Sprinkle the potatoes with salt and place in the oven, directly on the shelves. Bake for about 1 hour or until they feel soft in the centre when pierced with a skewer.

4. Just before serving, cut the cheese into 24 thin slices. Make 2 slits in each potato and put a slice of cheese in each slit. Serve at once while the potatoes are still hot.
