Almost every culture has at least one potato salad to its credit and most have many. This recipe is a typical American version.
1/2 kg (1 lb) Cooked potatoes, sliced
125 ml (4 fl oz) 1/2 cup Mayonnaise
1 Tbs Lemon juice
1 Tbs Olive oil
Salt and pepper to taste
2 Tbs Chopped chives
4 Tbs Chopped leeks
1. Put three-quarters of the potatoes in a salad bowl. Pour over the mayonnaise, lemon juice and oil and season to taste with salt and pepper, and half the chives. Toss until the potatoes are thoroughly coated.
2. Arrange the remaining potato slices on top of the salad and sprinkle over the remaining chives and the leeks. Cover and chill in the refrigerator for 30 minutes before serving.
