Shrimp Butter (Beurre de Crevettes)

fine puree of shrimps
butter

method

Mix together equal quantities of fine puree of shrimps and butter, adding a point of cayenne. Mould into a cylinder shape 3 cm in diameter. Roll in greaseproof paper and store in a refrigerator until firm. Serve with shallow or deep fried fish, add to white sauce to give added flavour, and with grilled and poached fish.
