Orange honey fluff

Preparation time: 10 minutes, plus chilling,

ingredients

serves 4
25 g (1 oz) honey
grated rind and juice of 1 orange
2 teaspoons lemon juice
300 ml (1/2 pint) natural low-fat yogurt
2 egg whites
few strips of orange rind, to decorate

method

1. Blend the honey with the orange and lemon juice. Stir in the grated orange rind and yogurt.

2. Whisk the egg whites until stiff and fold into the mixture. Spoon into four sundae dishes and decorate with the orange rind.

3. Serve lightly chilled. Do not leave in the refrigerator for more than 1 hour or the mixture will start to separate.

Remember to take the egg whites out of the refrigerator 30 minutes before you whisk them. This will help to increase their bulk.
