Boiled Mixed Vegetables (Macédoine de Légumes)

ingredients

serves 10
400 g carrots
250 g turnips
200 g French beans
150 g peas
50 g butter
salt

method

1. Cut the peeled carrots and turnips into 8 mm dice and the beans into diamond-shapes.

2. Cook them and the peas separately in boiling salted water, drain in a colander and toss together in the hot butter; serve dome-shape in a vegetable dish.
