Lemon Pudding

ingredients

serves 4
1/2 stick (2 oz) 50 g butter or margarine
1/2 cup (8 Tbls) 100 g caster sugar (superfine granulated)
3 eggs
grated rind and juice of 1 1/2 lemons
1 1/3 cup (5 1/2 oz) 150 g plain flour
200 ml milk
fat for greasing

method

1. Cream together the fat and sugar.

2. Separate the eggs and beat the yolks, lemon rind, and juice into the creamed mixture.

3. Fold in the flour and milk.

4. Whisk the egg whites until stiff and carefully fold into the mixture.

5. Put into a greased 1 litre pie dish and bake in a moderate oven at 180°C, gas mark 4, for 40-45 minutes until firm and golden brown.

6. Serve with lemon sauce.

Needs to explain what the texture should be like in the middle of the cake and prehaps a picture of a finished product
