Cheese Pudding

ingredients

serves 4
100-150 g Cheddar or Gruyere cheese
2 eggs
250 ml whole or skimmed milk
2 cups (4 oz) 120g soft white breadcrumbs
salt (optional)
butter for greasing

method

1. Grate the cheese.

2. Beat the eggs until liquid, and add the cheese and milk.

3. Add the breadcrumbs with a little salt, if needed. Mix thoroughly, and pour into a greased 500 ml dish.

4. Bake in a moderate oven at 180°C, Gas 4, for 25-30 minutes, or until set in the centre and browned on top.

Serve hot.
