Rice and Olive Stuffing

Rice and olive stuffing is great for stuffing baked fish. It's basically a mixture of rice, herbs and olives.

ingredients

enough for a 1 - 1.5kg fresh haddock
3 tbsp long grain rice or 125 g cooked rice
1/2 stick (2 oz) 50 g butter
1 medium-sized onion
2 sticks celery
2 oz (50 g) stuffed olives
1/4 tsp spoon dried sage
1/4 tsp dried thyme
salt and pepper

method

1. Cook the rice in boiling salted water until tender; then drain.

2. Melt the butter in a small pan.

3. Prepare the onion and celery and chop them finely.

4. Fry gently in the butter for 3 minutes.

5. Chop the olives, and add to the pan with the rice and herbs; cook gently for 3 minutes. Season to taste.
